TASTING

Fine bubbles, fresh, crystalline acidity and well combined with the fruit. Very aromatic (between fennel and white plum), with good aging.

PAIRING

Dishes to pair, new types of salads with the use of fruit and the increasingly wide range of vinegars. The cavas and paellas, excellent harmony, oily fish or more oily since the carbonic effect helps to offset the greasy sensation in the mouth.
